Have you ever optimistically bought a whole bunch of vegetables for the week, only to get to Friday and still have most of them going off in the fridge? Yep, me too. You feel bad about throwing them away, but you’ll try again next week? Why not throw them all into a pot and make soup? This is often what I do. Don’t worry I won’t tell anyone. Just try not to use any vegetables growing their own version of penicillin.
What you will need is your brilliant collection of yellowing (not fermenting) vegetables, 2 leek stalks and a pinch or two of spice and you’re good to go!
THE BASIC IDEA
- Fry the leeks until they’re soft, add vegetables (about 3 cups) and allow them to soften-over as well.
- Add about a litre of water & spices of your choice
- Boil the mixture for about 40min until it all blends together
You could use a pre cut soup mix and add your vegetable to that. Another idea is to defrost any frozen soup you might have on the stove and thicken that soup with your extra vegetables.
