I did quite a decent vegetable shop at the beginning of last week and then we ended up eating out a lot more than planned. This meant that at the beginning of this week, I had a lot of veggies about to turn bad. I have also been too tired to cook anything complicated, so easy prep meals are the way forward for me. This is what I came up for dinner last night and lunches for the next two days. Its basically a yummy vegetable mix and for this dinner I added tuna on top, straight out of the can, just drained. Then I had a piece of fruit for dessert.
