This week for my veggie stash I attacked a packet of beans. Just chopped of the stalks, hacked them into 4 pieces , washed them and then threw them into the pan with a touch of coconut oil. I personally like green vegetables pretty raw, so I cooked them just until they changed to a slightly brighter green. After which I popped several of them into my mouth and the rest into containers for the week. If just green beans is too much for you, you can mix them up with broccoli and courgettes. Either way defiantly give this a try.
