Easy Vegan Veggie Mix

These vegetables have so much flavour, so you don't have to work hard to make it taste good. Just throw it together and enjoy!

Ingredients:

3 servings

  • 1 kg beetroot
  • 1 large sweet potatoes
  • 1 corn on the cob
  • Mung bean sprouts
  • 1 tbsp coconut oil
  • 1 – 2 tbsp olive oil
  • salt and pepper

Instructions

ROAST

  1. Pre heat the oven at 180 degrees celsius
  2. Wash beetroot and sweet potatoes throughly
  3. Roughly chop up the beetroot and the sweet potatoes, cutting off any bits you don’t want to eat
  4. Lightly cover the beetroot and sweet potato in olive oil, sprinkle a large pinch of salt and pepper over vegetables
  5. Place beetroot and sweet potatoes in the oven for 30 – 40 min, or until soft

FRY

  1. Chop the stalks off the beans and cut the bean stalks into 4 pieces
  2. Place pieces in colander and wash
  3. Place frying pan on high heat with coconut oil inside
  4. Once the pan is warm, place the beans, keep mixing them up in the pan, so the bottom ones don’t burn
  5. Fry for a few minutes and once most of the beans have turn brighter in colour, take them off the heat (you don’t want to over cookthem, just slightly soften them)

MAKE

  1. Place your roasted veggies in your bowl/container
  2. Add your beans on top or next to
  3. Sprinkle the mung beans over it all
  4. Cut your corn off the cob and scatter onto your meal for a bright pop of colour
  5. Enjoy!

ADDITIONS

If you would like to add some sort of meat, boiled eggs or tuna goes really well with this.
