Gourmet Scrambled Eggs

This is definitely one to remember for times when you are tired and hungry, or short of time.


  • Eggs in pan_not scrambled_close up
  • Red Pepper

  • Eggs (for two people I use 6 eggs)
  • around 5 stalks of spring onion
  • 4 baby tomatoes (they can make the eggs watery, so not too many)
  • 1/2 block of feta (any flavour)
  • Salt & pepper
  • Any other left over veggies in your fridge that you think might go. This week I had a red pepper ready to be picked in my garden, so I used that


  1. Crack eggs into pan
  2. Chop up feta and spring onion into pieces and add to pan
  3. Cut baby tomatoes in half and add to pan, along with anything else
  4. Add salt and pepper to taste
  5. Place on medium – high heat and stir continuously until cooked, but still moist
  6. Take a quick snap of what you made and post it on instgram with #cleaneatscapetown
  7. Enjoy
