Left Over Soup

This recipe is crazy easy! Best for tired Friday nights or busy Sunday evenings or when ever you are clearing out the fridge. Never waist valuable vegetables ever again.

Vegetable Soup

Ingredients:

  • 3 Cups Vegetables (I used 2 cups broccoli & 1 cup cauliflower)
  • 2 leeks
  • 1100 ml water
  • 1/2 cup barley (If not using barley, only use 800 ml water)
  • 1/2 tsp tumeric powered
  • 1 tsp garlic powder
  • 1 tsp coconut oil (You can just use a little bit of water on a low heat if you prefer)

Method:

  1. Chop leeks & wash throughly
  2. Fry leeks in coconut oil until soft
  3. Wash broccoli and cauliflower, then roughly chop
  4. Add the vegetables to the pot and fry for a few minutes until they begin to soften
  5. Add 800 ml of the water to the pot and, bring the soup to the boil
  6. Simmer gently for 30 min
  7. Break up veggies into smaller pieces with wooden spoon
  8. Rinse 1/2 cup barley
  9. Add washed barley & 300 ml of water to soup
  10. Add garlic, turmeric power, salt and pepper to taste
  11. Bring the mixture back to the boil and allow to gently boil for 40 min
  12. Enjoy!
